Polar Bar sits on the busiest corner of Bariloche, and inside everything is below zero: walls, bar, sculptures and glasses carved from ice, a thermal cape at the door, and a fernet served in a glass that melts before the drink does. An experience designed down to the last detail — sold by hand. A tourist planning their trip from São Paulo or Buenos Aires had nowhere to buy: you had to show up, queue on the street (outdoors, in winter) and pay at the door. Without advance sales there was no way to manage each slot's capacity, no data on visitors who fly home three days later, and nobody to answer in Portuguese in a city where half the tourists speak it. The bar's only box office was the hand of whoever was at the door.
